Italian tortellini soup has become one of my all-time favorite soups to make. It’s so warm and hearty but not heavy and perfect for any time of the year. It’s seriously one soup that I crave all the time! This Italian soup has a hint of heat but not enough that my 5-year-old cannot eat it.The best part is that it takes about 20 minutes to throw together so it’s perfect for weeknights. If you’re looking for a soup to warm you up on a particularly cold day, this is it. And it adds just enough variety to your weekly menu that things won’t feel stale in the middle of January. This is comfort food at it’s finest.

Italian sausage gives this tortellini soup recipe so much more flavor than plain ground beef, and the Rotel tomatoes give it a slight kick.

It’shard to eat just one bowl, so plan accordingly. The good news is, it makes a big pot full, and it reheats perfectly the next day. Don’t worry about the tortellini getting soggy, because they are actually just fine the next day as well. You can always double the recipe if you’re cooking for a crowd and want leftovers. This is the perfect winter soup and everyone is sure to love it.

Italian tortellini soup also freezes well, just skip the step of adding the tortellini. If you add the pasta before freezing when you thaw it out it will become mushy. When you are ready to thaw and eat just reheat the soup and add a package of tortellini to cook before serving.

Ingredient List

  • 1 lb Italian sausage if it is in casing take it out
  • 1 medium sweet onion
  • 1 tsp. minced garlic
  • 3/4 cup diced carrots
  • 1 32 oz box low sodium chicken broth
  • 4 cups water
  • 1 can original Rotel tomatoes
  • 2 tbs. Italian seasoning
  • 1 tsp. each salt and pepper
  • 1 tsp. garlic powder
  • 2 tbs. tomato paste
  • 19 oz package frozen cheese tortellini I used Publix brand
  • shaved or shredded Parmesan cheese

Directions

  1. In a Dutch oven or soup pot, over med heat, start browning you Italian sausage chopping it up as you go like you would ground beef.

  2. Once it starts browning throw in your onion and garlic and let it start to sweat for about 2 minutes you donâ??t want to let it brown.

  3. Next add the carrots. Keep tossing it around until the onions are opaque and the sausage is cooked through.

  4. Pour in the chicken broth, water, Rotel tomatoes, Italian seasoning, salt, pepper, garlic powder and tomato paste.

  5. Let it simmer together for 30 minutes.

  6. Taste and add more salt if you wish, but keep in mind you are going to add Parmesan cheese which is salty as well.

  7. After simmering for 30 minutes add the frozen tortellini and simmer for another 10 minutes or until the tortellini is cooked through.

  8. Serve this Italian Tortellini Soup hot and top with Parmesan cheese. You can try it without but I promise you the Parmesan makes this dish.

  1. Thanks, Kelly, for this recipe. I'm kind of a wimp when it comes to spicy, so I used fire roasted tomatoes instead of rotel. I threw in a bit of spinach as well. WOW! This is our new favorite soup!

  3. The only thing is I do not add water just all broth. Yummy! It is so good my son wants this for his birthday supper. It is super hard to find this one recipe but I have shared it for you that I can find it again and pretty much have it memorized. Thank you is way overdue!

  4. I have made this once before and the entire family and 6 year old grandson LOVED it. I just pull the recipe out again to make it and I make notes on the recipe and try some of the suggestions that others have made. I have a note on the recipe that says to add 1 cup of half and half. Not sure where that came from, I just reread all comments and didn't see where that would have come from. Got any suggestions; i.e., add it/don't add it. I am going to make this again, but wanted to ask about the addition of the half and half. Thanks, Janet

  5. I LOVE this soup, however it ends up not really being SOUP since all the tortellini sucks up all the liquid. Am I doing something wrong? When reheating it, there is NO LIQUID at all.

    1. Sometimes it will soak up more the longer it sits. I usually will add a little water or a little more chick stock to it if that happens

  6. When you added the Italian seasoning did it sit at the top even when you stirred it? I am just now starting the simmer....

    1. It will rise to the top when it's dried, once it starts to soften it will mix in better. I just usually stir it up before I serve.

  12. I made this last night on a whim hoping to please my seven kids, some of which are rather picky eaters. I was fully expecting my a battle, especially with my three year old. To my surprise, they gobbled it up and were asking me to make it again! I should have doubled it! My husband barely had enough to take to work the next day, I had to hoard it for him. :) Delicious! This is going in my recipe box. I'm definitely going to try the spinach thing next time. Thanks!

  15. I am very challenged in the kitchen and I made this...it was so spicy. All I could find was rotel tomatoes with green chiles in them. Is this the right thing? If it is I wouldn't be surprised if my husband went behind me and added something to give it a kick, but I was just wondering.

    1. Yes that is the only way the come but you can buy mild, medium, original or hot so if it was too spicy you may want to go mild. You can also use mild Italian sausage instead of hot. Sneaky hubby's that's funny.

      1. Hi Kelley, thank you so much, I can see the recipe again without pop ups! My sister is visiting and wanted to have this soup again, so I made it for her and my brother who thinks our lovely 45-degree Alaska spring weather is too cold. I also made it for my mom with the short salad macaroni noodles instead of tortellini, and added a can of low sodium red kidney beans. I think I will try adding some zucchini next time--such an easy recipe to flex when you don't have all the ingredients on hand.

  18. A friend brought this to us as a meals ministry meal and I begged her for the recipe. It's so delicious and comforting! My husband is making it again right now, he exclaimed from the kitchen, "2 Tablespoons of Italian seasoning?! That's a lot!" But not long after he had put in only 2 tsp. he corrected, saying, "maybe it does need 2 T after all." I knew he'd come around because none of the comments mentioned an error.

  19. I'm making this to share with my department at work. The only thing I would change is a little secret my mom taught me....add 1 Tbsp sugar. She did this with any tomato based recipe to cut the acid just a bit. Thanks for sharing!

    1. You know I have been wanting to try that! I would not add the tortellini until the last 30 minutes or it may get too mushy. When I make it on the stove top it takes no more than 30 minutes to make it and heat to eat though.

  21. My boyfriend just underwent thyroid removal surgery and when I brought him home from the hospital all he wanted was soup. I decided to try out this recipe and I am so glad that I did! It was amazing! He's been talking about it since I made it, and has even said that it would be a perfect meal to serve company with due to how appealing it is to the eye. I followed the directions exactly except I added in celery with the carrots and when I put the tortellini in (I used fresh), I threw in a few handfuls of spinach. Thank you so much for making my sick boyfriend so happy!

  28. Made this today. Really easy to make. The only thing I changed was to add like 2 teaspoons of chicken base. My husband ate it like it was his last meal...He LOVED it! I myself do like chunks of tomatoes so when I make it again (which I was asked to do) I would puree them. The broth is delish...And the parm cheese really does set it off! When we ate it I put some into another pot and added the frozen pasta. I'll maybe freeze the rest and add the pasta when I thaw it. That is, if it even makes it to the freezer.

    1. Yea glad you enjoyed it. I have never tried it because it doesn't last long enough in our house to freeze. You can try it with the tortellini but you may want to make a batch of the soup without and freeze it separately from the tortellini if they don't hold up well to re-freezing.

  31. Was curious as to what type of Italian Sausage to use.? Mild or sweet? I made it last night with the mild and my husband and I loved it, but was a bit too spicy for the kids. I have never tried the sweet and am hoping that is what you make yours with. I really liked the soup and want to keep it in my recipe file.

    1. I have made it with Hot and Mild Italian Sausage and both are good. I have never tried it with sweet but give it a go. Glad you liked it.

    1. Yes! I bet it would be great with mushroom but I am sure you could use just about any flavor you wanted, except for maybe seafood.

  35. Holy cow GOOD! I made this tonight and the whole family loved it! I did cut back on the Italian seasoning since my sausage had a lot of seasoning already. I also used 3 cheese tortellini, so I didn't add more cheese. Served up with Italian bread. OH SO YUMMY TY TY TY!
