Its been among the best use of the sources.

Glad you have enjoyed the recipes!

  2. Gayla DavisReply

Love your recipes. Just trying your zucchini muffins tonight.

Here's something to try with zucchini, if you haven't. My brother told me about a dish he had in Italy with burned zucchini and tomatoes. Slice up your zucchini as you would to cook it for a side dish and put it in a frying pan with a little olive oil. Cook over medium-high heat until the zucchini chars some on the outside. (Not just a golden brown, really dark.) Add tomatoes ( I just use canned Italian Seasoned ones.) and warm through. This really does something for the zucchini, making it somehow better than ever.

    • Kalyn DennyReply

Thanks Gayla, glad you are enjoying the recipes. I am intrigued by the idea of burned tomatoes! Will definitely have to try that.

    • Gayla DavisReply

Don't burn the tomatoes, just the zucchini!

    • Kalyn DennyReply

Yes, that's what I meant to say! My brain is not 100% per cent awake yet.

  3. Lisa MagoulasReply

    Wow,
These recipes look amazing. I can't wait to try some. I've bookmarked your page. I love to cook and you've got great ideas that I can share with my readers. Thanks so much. Lisa

Mickey, have fun gardening. I don't really know how to reply to that, since I have no idea what recipe you're referring to. If it's a question on a specific recipe, you can click through and ask it on that post.

  5. MickeyReply

I finally have time to grow a garden since retiring in March. Of course the zucchini and yellow squash are prolific. I have tried your recipes but find they are soupy. Do you cook the zucchini first? Additionally, I have made bread and butter pickles with my zucchini, yellow squash, onions, and pimentos…delicious. You can't tell they are not cucumbers

  6. TerrahReply

    Hi Kalyn!

You've quickly become one of my favorite food bloggers. I don't follow South Beach to a tee anymore but reading your blog helped me to remember how tasty and healthy the meal plans are. I just save your zucchini roundup on my desktop. The meals are VERY doable yet healthy. I can't wait to try them.

  7. Kalyn DennyReply

Thanks Kelly! I have to admit I was kind of stunned to realize that I had over 50 zucchini recipes, and once I got started I found so many good ones!

  8. kellypeaReply

I am swooning over this list of recipes. I think I just may need to go on a zucchini diet. Goodness knows I'd always be satisfied with something delicious — yes, even for breakfast. Wonderful!

  9. Kalyn DennyReply

    Lydia, my pleasure!

  10. Lydia (The Perfect Pantry)Reply

Wow — that's a lotta zucchini! So many great ideas here; I'm printing this updated post to keep on my fridge during zucchini season. Thanks so much for mentioning my zucchini e-book.

  11. Kalyn DennyReply

RJ, I have heard of people freezing shredded zucchini and baking with it in the winter, but I haven't tried it. If you have a FoodSaver, sealing it in a bag would be the way I would do it.

  12. RjReply

Great ideas Kalyn. Question for you. Can I freeze raw zucchini now,for winter baking later? Does it come out thawed still the same? Thanks a lot.

  13. Kalyn DennyReply

Tsan, thanks for the great idea! Sounds delicious, both versions.

  14. TsanReply

Thanks for some great ideas, love the marinated raw salads, I never would have thought of that! One of our favorites is zuchini crab cakes

shred 2-3lb zuchini and toss with 1/2 tablespoon old bay seasoning, let sit in colander and press well after 30 min.
add 1 diced onion, 1 egg, and enough breadcrumbs to make it tacky and saute till golden brown on each side.

they freeze great and we eat em all winter long, a similar greek style recipe can be done with salt instead of old bay, 1/2 cup feta, chopped parsley and mint, salt pep to taste, and then fry in olive oil
    Enjoy

I'm so happy I found this blog! Especially the Zuchinni recipes! You are so creative; I love it!

  16. Andrea C.Reply

Thank you sooo much!! Zucchini is one of my favourite foods. So great to find so many things to do with them!

  17. Mallee ChickReply

I have grated zucchini and let it drain. Then mixed it with grated cheese, thinly sliced onion and chilli to spread as a pizza topping.

  18. Kalyn DennyReply

David, I have made zucchini lasagna like that and really enjoyed it. Thanks for the nice thoughts about the recipes!

  19. David LeiteReply

We had so many zucchini, and vegetarian friends were coming over, that I made a zucchini lasagna, swapping the zuccs for the pasta. It was amazing, and ever-so-easy. But we still have some left over so I'll have to tuck into some of your recipes.

  20. Kalyn DennyReply

Cristie, hope you enjoy the recipes!

  21. CristieReply

Great round up. That grilled salad looks delicious and I've been looking for some whole wheat versions of bread that are low in sugar, I'll give these a go.

  22. Kalyn DennyReply

Day, so glad you liked it!

  23. DayReply

Kalyn, I made the marinated zucchini salad and it was awesome! I added some lemon zest for extra zing! Thanks for all the great ideas!

  24. Kalyn DennyReply

PJ, just picked a bunch more zucchini yesterday, so I'm going to be making something with zucchini myself today (probably "creamed" zucchini for my dad!)

  25. PJReply

i have lots of zucchinis from farmer's market sitting in my fridge now, so i am glad to have seen this post. I think the breakfast casserole is whats on my mind next.

  26. Kalyn DennyReply

    Julia, thanks for sharing.

  27. JuliaReply

Wow thanks for all the zucchini recipes. This is great. We have been getting an abundance of them in our CSA, and so are always looking for new ways to use them. Here's a recipe we put up that you might like as well:

Thanks Kevin! I'm giving it away (literally) at my house!

Great collection of zucchini recipes! The farmers are practically giving it away at the markets thee days.

  30. Kalyn DennyReply

    Karina, thanks!

  31. Karina AllrichReply

So many fabulous zucchini recipes- so little time. I want to try every one.

  32. Kalyn DennyReply

Mama Peck, how I wish I could give you some!

  33. Mama PeckReply

These ALL look wonderful! Makes me homesick for my garden in Utah. Unfortunately, we haven't learned the trick of growing zucchini in Az and it kills me to have to BUY it! I would love to have someone leave some on my porch… come on over! 🙂

  34. Kalyn DennyReply

Shirley, thanks for helping me find it. (Unfortunately I have a conflict for BlogHer food so I won't be there, sigh.)

  35. gfe--gluten free easilyReply

Hey Kalyn, here's the link to Ali's original recipe: http://www.nourishingmeals.com/2009/08/zucchini-baketastes-like-cheese.html Not sure why it wouldn't show up in the search (I looked, too). I found it on her sidebar links. 🙂 Glad you subscribed! You'll love her recipes. She'll be at BlogHer Food again this year, so I'll be sure to introduce you. 😉

    Shirley

  36. Kalyn DennyReply

Dara, it must have been great zucchini weather lately in Utah, because the plants are going wild here too.

Best Cook, thanks! (I do work hard on the photos, although I still have a lot to learn.)

Shirley, love the sound of that recipe, but I couldn't seem to find it when I searched on that blog. (Did subscribe to her blog though, thanks for introducing me to it!)

    Amanda, thanks!

  37. AmandaReply

Wow fabulous round up Kalyn, thanks!

  38. gfe--gluten free easilyReply

Now, that's some zucchini love, Kalyn! That zucchini bread with the blueberries popped out at me. 😉 All look great though. I'm making a zucchini bake this evening for our support group meeting: zucchini, sweet onion, almond flour, olive oil, and seasonings. It's a recipe from Ali at Whole Life Nutrition Kitchen. Everyone loves it. I even added some chicken, cheese, and tomato sauce, and turned it into a main dish as Cheesy Chicken Zucchini Bake. One needs never be short on ideas with your listing. I especially love your numerous salad ones–thank you!

    Shirley

  39. best cookReply

Love all your recipes and the pictures look great!!

  40. Cookin' CanuckReply

Perfect timing for this post. Our plant is producing huge zucchini right now and we're doing everything we can to keep up with it. That zucchini bake is particularly enticing.

  41. Kalyn DennyReply

Tanna, that would be a fun idea! Glad you liked the post.

  42. MyKitchenInHalfCupsReply

I'd love a big bag of zucchini about now … now that I have these recipes.
Seriously, wouldn't it be neighborly to find these recipes tucked in a bag of zucchini.
    Really Excellent Kalyn.

  43. Kalyn DennyReply

Amanda, the cupcakes look good. (Not South Beach friendly for my diet though, sigh.)

Shea, hope you get some zucchini! Maybe one of your neighbors will hear about it.

Jacqueline, thanks for sharing, never too many good zucchini recipes.

The Housewife, thanks! Hope you get to try the Chocolate Zucchini bread.

  44. The HousewifeReply

The chocolate zucchini bread has been on my to do list for a very long time… what better way to get your veggies in! 😀 I really like your line up of recipes!

  45. JacquelineReply

I love the look of that marinated salad and the bake and the salad with feta…..

We recently had a zucchini roundup for No Croutons Required and the entries were fabulous, it was one of my favourite rounds. You can be so creative with zucchini or courgette as we call it in Scotland.

  46. SheaReply

These recipes look wonderful. Zucchini is my most favorite summer vegetable, so I'm always looking for new things to do with it. I really wish I had a neighbor who felt the need to ditch some on my doorstep.

  47. AmandaReply

I made a yummy zucchini cupcake this year… my family cant get enough of them!

  48. Kalyn DennyReply

Jane, your zucchini salad sounds good, especially the walnuts.

Pam, thanks! Glad you can use some zucchini recipes!

Lynette, zucchini will be great for phase one. Sounds like your brother-in-law is in the holiday spirit!

  49. LynetteReply

Perfect timing! I was just complaining that I didn't have any friends with gardens when I bought ny own zucchini at the grocery store. Then my brother in law showed up with more zucchini from his garden. I just started phase 1again after being told by the doctor to lose weight!

  50. PamReply

You have officially become my very very favoritest person!

  51. Jane @ Sweet Basil KitchenReply

I think the neighbors used to run the other direction when they saw me coming with sacks of zucchini. I have a favorite salad of shredded raw zucchini, swiss cheese, walnuts with a basic vinaigrette dressing. It is on my blog. This post makes one realize you cannot have too much zucchini!

  52. Kalyn DennyReply

Jessica, so glad you're enjoying the blog. I don't know for sure what's causing your zucchini problems, but I found this about why zucchini blossoms fall off. That makes it sound like you'll still get zucchini. If that doesn't fit what's happening with your plant, I would google to see what else you can find! Good luck!

  53. JessicaReply

Kalyn I have to say I just LOVE your blog!!! I was excited to try to so many of your recipes with my fresh produce this summer, but unfortunately my garden has only given me a handful of green and yellow beans and 3 cucumbers.. 🙁 I've loved every recipe I've tried so far!! If you don't mind, I was wondering if you know what pops the flowers off of my zucchini plant, and what to do to avoid this next year? I have a garden fence, have used insecticides and have been fertilizing! I've never had this problem!!! Thanks…

  54. Kalyn DennyReply

Val, if only you lived by me, I would be happy to share!

  55. bellini valliReply

Right now I wish someone would sneak some zucchini onto my porch…did I just say that:D

  56. Kalyn DennyReply

Thanks Susan! I love it too, but I confess I can't keep up with the harvest. Of course, the neighbors don't mind getting it!

  57. Susan @ SGCCReply

Fantastic collection of zucchini recipes! Although, no one has to sneak any on my porch. I love the stuff!

  58. Kalyn DennyReply

Foodalogue, thank you, and you're right, the possibilities are endless!

Lydia, glad you like the Greek salad idea. Isn't this a fun "holiday"?

TW, I had a feeling you might have some surplus zucchini! As you can imagine, I was so sad to miss BlogHer this year, but next year for sure I'll be there!

  59. T.W. Barritt at Culinary TypesReply

What a fantastic "Zucchini Fest!" As you might expect, I'm overun with zucchini, and I think I might adapt one of the baked dishes with cheese for tonight. (Missed you at BlogHer!)

  60. Lydia (The Perfect Pantry)Reply

That Grilled Greek Zucchini Salad is going to become one of my favorites, too. I like to make zucchini and herb frittatas. Thanks for celebrating this holiday!

  61. FOODalogueReply

You've proved the versatility of zucchini is seemingly endless. Wonderful array of dishes.
